The term c was born in the United States in the seventies and indicates a type of food that gives comfort o transmits a feeling of well-being; it is usually a food rich in carbohydrates, which reminds us of the cooking of our mothers or grandmothers, of when we were children.
Each of us, among our comfort foods, certainly has a nice homemade cake; the scent of the cake that comes out of the oven and fills the whole house is a pleasant memory for many people.
The homemade breakfast cake can be declined in many recipes. I would like to propose one that is inspired by an American dessert and that perhaps therefore, at first glance, it may appear far from an idea of ​​comfort food all over the village. In reality, however, banana bread has all the characteristics of food that pampers and gives a good mood.
The banana bread recipe
This banana bread recipe contains chocolate, the ultimate comfort food. It is a very simple dessert to prepare, substantial, excellent for breakfast for the whole family and for a snack for children.
For best results, use banana i mature.
Ingredients
> 400 g of banana pulp equal to 3 or 4 bananas;
> 80 grams of whole cane sugar;
> 2 eggs;
> 200 g of flour 00;
> 75 g of softened butter;
> 1 whole vanilla yogurt;
> 1/2 teaspoon of cinnamon powder;
> 1 sachet of baking powder for cakes;
> 50 g of dark chocolate;
> juice of half a lemon.

Preparation
Coarsely chop the chocolate. Mash the banana pulp very well with a fork and sprinkle it with the juice of half a lemon.
Separately, mix the butter with the sugaruntil a creamy consistency is obtained, add the yogurt and the two eggs and continue mixing.
When the ingredients are well blended, incorporate the mashed bananas and then the sifted flour, a spoon at a time, always stirring, and finally the cinnamon, the chopped dark chocolate and, lastly, the sifted yeast.
Pour the mixture into a previously greased and floured mold and bake in the oven at 180 ° C for 50 minutes.
If you want to get a crunchy crust on the surface of the cake, sprinkle a nice spoonful of brown sugar over it before putting in the oven.
If you wantand a sweeter result, increase the amount of sugar in the recipe. In reality, bananas are already sweet and it would not be necessary, but for a comfort food, an exception to the rule can be done; it is however advisable not to exceed 100 grams.
Banana bread is usually baked in a loaf pan, but nothing prevents you from making a different shape, for example a donut.
Alternatively or, in addition, to chocolate you can add chopped walnuts and / or hazelnuts in the recipe.
An even more greedy and comfort idea is serve lukewarm banana bread. Simply cut a large slice and heat it in a non-stick pan, oven or toaster.
