Barley curiosities
Barley was a very present food in diet of the Roman gladiators who appreciated its energizing qualities and consumed it mainly in the form of soup. For this reason they were called hordeani, from hordeum.
A recipe up your sleeve
Barley with mushrooms. Ingredients for 4 people:
- 350 grams of organic pearl barley, one shallot,
- 150 grams of fresh champignon mushrooms,
- 150 grams of fresh or frozen porcini mushrooms,
- parsley,
- vegetable broth,
- salt and pepper,
- a glass of dry white wine,
- extra virgin olive oil.
Preparation. Clean and cut the mushrooms, prepare the vegetable broth. Chop the shallot and lightly fry it in a little olive oil, add the barley and let it brown, as you would with rice, then add the mushrooms. Deglaze with a glass of white wine and then pour in the boiling broth, one ladle at a time, always stirring, until cooked. Season with salt and finally add the finely chopped parsley and pepper.
