Ingredients
250 gr of cherries
300 grams of spelled flour
500 gr of classic or vegetable white yogurt
80 grams of whole cane sugar or rice syrup
50 ml of extra virgin olive oil
2 tablespoons of rice flour
1 sachet of organic baking powder
1 teaspoon of natural vanilla powder
Preparation
To start the preparation of the plum cake, wash and dry the cherries, divide them into two parts and pit them. Prepare a large bowl in which you will pour the spelled flour, the brown sugar (or other natural sweetener, such as rice or agave syrup) and the extra virgin olive oil.
Also add the natural vanilla powder and gradually the classic or vegetable plain yogurt, depending on your preferences. Mix the ingredients vigorously using a wooden spoon. You will need to obtain a homogeneous mixture without lumps.
Also add two tablespoons of rice flour. As the last ingredients of the dough, first add the organic baking powder and after mixing also pour the cherries into the bowl and mix again to mix them with the dough.
Brush a loaf pan with extra virgin olive oil and lightly flour it. Pour the mixture into the mold evenly. Cook the plumcake in a preheated oven at 180 ° C for 45-50 minutes. Test the toothpick to check the internal cooking of the plum cake before taking it out of the oven. Enjoy your meal!
