Nutritional properties
Soy it is a legume like beans, chickpeas or lentils, and like all legumes it is rich in B vitamins, iron and potassium.
Soy is not a traditional Mediterranean food, but it was introduced to Europe from Asia.
Unlike other legumes, soy:
it is richer in proteins and lipids (saturated, polyunsaturated and phospholipids such as lecithin, which has emulsifying properties and decreases blood cholesterol levels)
it is more digestible
it is rich in phytosterols and in particular in two primary isoflavones (genistein and daidzein). Phytoestrogens are substances with estrogenic action, i.e. they are capable of binding to the estrogen receptor, even if this activity is between one thousand and one ten thousandth of that of estradiol, the main female hormone. According to some studies, phytoestrogens, particularly useful for women in the postmenopausal period, prevent tumors and in particular those of the breast, prostate and protect against osteoporosis.
