Vegan bechamel: 5 recipes to prepare it at home

Prepare the homemade bechamel in version vegan it's very simple. 500 ml of unsweetened soy milk
35 gr of whole wheat flour
35 gr of extra virgin olive oil
1 pinch of nutmeg

Toast the wholemeal flour and extra virgin olive oil for a couple of minutes in a thick-bottomed saucepan. Pour in the soy milk e mix carefully with a whisk. Keep stirring until everything comes to a boil. Lower the heat and stir again until the béchamel is creamy. Alternatively, you can bring the soy milk to a boil, lower the heat and add the oil and flour little by little after sifting it. Mix with a whisk until the béchamel has reached the desired density. If you want, season the béchamel with a pinch of nutmeg, salt and pepper. For a thicker result, you can increase the amount of oil and flour up to 50 grams. It is possible to replace wholemeal flour with 0 flour.


Vegan gluten-free bechamel

500 ml of almond milk
35 gr of rice flour
35 gr of extra virgin olive oil
1 pinch of nutmeg


In a saucepan, bring the almond milk. Lower the heat slightly. Pour the oil into the saucepan first and then the rice flour, one spoonful at a time. The advice is to pour the flour with a colander, to avoid the formation of lumps. Mix everything with a whisk and cook over medium-low heat for a few minutes, until it has thickened well. For a thicker result, add a little more flour and mix carefully. Season with a pinch of nutmeg, salt and pepper.

Vegan bechamel with vegetable broth

500 ml of vegetable stock
40 grams of 0 or wholemeal flour
40 gr of extra virgin olive oil
1 pinch of nutmeg

Prepare a rich vegetable broth based on seasonal vegetables, or simply usecooking water for the vegetables - it's a great way to avoid waste. Pour 500 ml into a saucepan and bring to a boil. In a saucepan, heat the oil and pour the flour, sifting it with a sieve to avoid the formation of lumps. Mix the two ingredients with a wooden spoon and gradually add the still hot vegetable broth. Then mix thoroughly with a whisk and cook over medium heat until the béchamel has reached the desired consistency. If you need a thicker béchamel, increase the amount of oil and flour up to 50 grams. If you want, season with nutmeg, salt and pepper.

Vegan bechamel with rice milk

500 ml of rice milk
40 gr of extra virgin olive oil
40 gr of rice flour
1 pinch of nutmeg
Salt and pepper



To prepare this béchamel, use rice milk unsweetened. Pour the milk into a saucepan and heat it, bringing it almost to a boil. Then add the extra virgin olive oil and rice flour one tablespoon at a time. Mix thoroughly with a whisk and keep the béchamel on the heat until it reaches the desired consistency. If you want, season it with salt, pepper and nutmeg.

Vegan bechamel with breadcrumbs

500 ml of unsweetened vegetable milk
50 gr of vegetable oil
50 gr of breadcrumbs
1 pinch of nutmeg
Salt and pepper

From the blog Healing with Colors, here's an idea to prepare béchamel with breadcrumbs. You can replace the butter with extra virgin olive oil, while the breadcrumbs will take the place of the flour. It is a good idea to reuse the leftover bread and now dry. You can grate it by hand or with a food processor. At the bottom of a pan, heat the oil and add the breadcrumbs. Mix well with a wooden spoon, then pour in the chosen vegetable milk and continue to mix vigorously with a whisk, until it boils. At this point, lower the heat and let it cook, continuing to stir until the béchamel has reached the desired consistency. If needed thicken, add a spoonful of wheat or rice flour and mix.
