Do you feel like a fresh and light dessert, but greedy and gratifying? Good! We propose you a sweet made with cherries, true protagonists of this season, which you combine with tofu and cinnamon will give you a truly unique taste, always respecting the vegan food style.
You will need:
600 g of tofu (in a stick),
200 g of soy yogurt,
500 g of cherries,
100 hazelnuts,
300 g of brown sugar, cinnamon and cognac.
After washing the cherries thoroughly, stone them and chop half of them. Then you start at chop the tofu with a fork, until it becomes a homogeneous cream; then add the soy yogurt, chopped cherries, 200 g of sugar, coarsely chopped hazelnuts and a generous pinch of cinnamon. Mix everything until you get a uniform mixture.
Once this is done, take a large pudding mold or panna cotta, pour in a light drizzle of seed oil and, with the help of a paper towel, grease all the sides of the container well.
Pour in the tofu mixture and with the back of a spoon push it well on the bottom, to remove any air pockets, e put it in the fridge after covering it with cling film. At this point, take the remaining cherries and cook them, over low heat in a non-stick pan, along with sugar remaining and stir continuously.
Enrich the sauce with a drizzle of cognac and continue stirring on the heat until the mixture has lost the excess water (contained in the cherries) and has become thick. Let it rest for a few minutes.
Then take out the mold with the pudding from the fridge, turn it over on a serving plate e decorate it with the warm cherry sauce.
