Here are some very simple sweets to prepare for a snack, for breakfast or to offer to friends. These muffin are based on wholemeal flour. For the filling you will use raisin e apples.
Their sweet and delicate flavor is given not only by fruit, but also by almond milk, which you can easily prepare at home. You just have to get the right molds and all the necessary ingredients.

Ingredients
Per 12 muffin:
230 grams of wholemeal flour
400 milliliters of almond milk
100 grams of raisins
100 grams of whole cane sugar or rice malt
50 milliliters of extra virgin olive oil
1 sachet of organic baking powder
½ teaspoon of vanilla bean powder
2 tablespoons of brown rice flour
2 teaspoons of lemon zest
2 apples
Preparation
Start preparing the muffins by softening the raisins in a bowl full of water for at least 15 minutes. In a large bowl pour the almond milk and gradually add the wholemeal flour and the rice flour, stirring with a whisk to avoid the formation of lumps.
Add the extra virgin olive oil, brown sugar or rice malt and vanilla powder to the ingredients. Wash the apples, peel them and slice them into cubes. Add them to the ingredients together with the raisins, after draining it. Mix the dough well with a spoon and as the last ingredients pour the baking powder and grated lemon zest into the bowl.
Prepare yours muffin molds. If necessary, grease and flour them. Fill each mold ¾ with the mixture you have prepared. Help yourself with a spoon or one pastry bag. Bake the muffins in a preheated oven a 180 ° C for 45 minutes. Let them cool before taking them out of the molds and serve them perhaps accompanied by a cup of tea.
