Today we offer you an original recipe to prepare some muffin with raisins and candied fruit, ideal to bring to the table for Christmas and during the holidays. If you don't like raisins or candied fruit, you can replace them with other ingredients, such as chocolate chips. If you have the opportunity, choose organic ingredients as much as possible.
To get the orange zest, you prefer organic or untreated citrus fruits. These Christmas muffins are reminiscent of small panettone. Here are all the ingredients and instructions to prepare them.
Ingredients for 12 muffins
300 gr of soft flour type 0 or spelled flour
200 ml of orange juice
150 gr of brown sugar
100 ml of organic corn oil
50 ml of water
50 gr of raisins
50 gr of candied fruit
2 tablespoons of potato starch or rice flour
1 sachet of baking powder
1 teaspoon of grated orange zest
1 pinch of ground cinnamon
Preparation
Before you start preparing the dough for your Christmas muffins, pour the raisins into a bowl, fill it with water and leave it soften for at least 15 minutes. In a large bowl pour the sugar and the wheat or spelled flour. Add the yeast and potato starch (or rice flour, alternatively). Stir with a spoon and add a pinch of cinnamon and a teaspoon of grated orange zest.
Squeeze the oranges (two large oranges should be enough to get 200 ml of juice), filter the juice with a colander and pour it into a bowl. adding 50 ml of water. Then add the ingredients already present in the bowl, both the orange juice with the addition of water and the organic corn oil and mix vigorously with a spoon.
The dough must be creamy and without lumps. Drain theraisin and add it to the mixture for the Christmas muffins together with the candied. Distribute everything in the dough, mixing with a spoon. When the dough is ready, you can pour it into molds for muffins, after having lightly greased and floured them, in the case of metal molds. Cook in the oven at 180 ° C for 30 minutes. Let the muffins cool before taking them out of the molds and serve.
You will get tasty and light muffins, free of cholesterol and ingredients of animal origin - therefore also suitable for those who are vegan. For a version gluten free, I recommend using certified flour, specific for celiacs, in a version suitable for the preparation of desserts.
